Tucked away in the heart of Marbella, just moments from steak restaurant Origen and the well-known Frank’s Corner, Ensue Marbella offers something refreshingly different to the town’s dining scene. Known for its Korean BBQ and hot pot experience, Ensue delivers a sociable, interactive style of dining that feels both contemporary and deeply rooted in tradition. Our recent visit, as invited guests, provided the perfect opportunity to explore this increasingly popular culinary trend.

Korean hot pot, much like its Chinese counterpart, has seen a notable rise in popularity across Europe in recent years. Diners are increasingly drawn to its communal nature and the ability to tailor flavours to personal taste. Rather than a conventional plated meal, hot pot invites guests to become part of the cooking process itself—an experience that feels as much about the social connection with the restaurant and fellow diners as it does about food.

At Ensue Marbella, this experience is elevated through thoughtful presentation and high-quality ingredients. We opted for the *Ying Yang* hot pot, a cleverly divided broth that allows for two distinct flavours in a single pot. On one side, a rich, spicy broth delivered depth and warmth, while the other offered a more delicate mushroom base—earthy, aromatic, and perfectly balanced that increased in mushroom flavour as the evening progressed. The contrast between the two created a dynamic dining experience, allowing us to alternate between bold heat and subtle umami with each bite.

What truly stood out, however, was the variety and quality of ingredients provided. As guests of the restaurant, we were treated to an extensive selection designed to showcase the full potential of the hot pot. Thinly sliced cuts of beef, pork, and lamb arrived beautifully presented, each portion ideal for quick cooking in the bubbling broths (about 15 seconds cooking time). Alongside the meats, a generous array of vegetables and mushrooms added both texture and freshness, absorbing the flavours of the broth as they cooked. On the side there was also a selection of ingredients such as fresh chillis, spring onion, sesame seeds etc.

The process itself is part of the enjoyment. There is something inherently satisfying about selecting your ingredients, dipping them into the simmering pot, and watching them transform in moments. It slows the pace of dining in the best possible way, encouraging conversation and shared enjoyment. Unlike many restaurant experiences, this is not about rushing through courses, but rather about savouring each stage.

Beyond the hot pot, Ensue Marbella also offers a selection of smaller dishes that complement the main event. The bao buns, soft and pillowy, provide a welcome contrast in texture, while the gyozas are flavourful, and executed with precision. These additions round out the menu nicely, offering variety without detracting from the central experience.

The setting itself strikes a balance between modern and inviting. It feels considered without being overly formal, making it equally suited to casual evenings or more social occasions. Service throughout the evening was attentive and knowledgeable, with staff on hand to guide those less familiar with hot pot dining, ensuring that the experience remained accessible and enjoyable. There is also an a-board that explains exactly how to enjoy the experience.

What makes Ensue particularly noteworthy is how it taps into a broader shift in dining preferences. As global cuisines continue to influence European food culture, experiences like Korean hot pot are becoming more than just a novelty—they are becoming part of the mainstream. Marbella, long known for its international appeal, feels like a natural home for such concepts, and Ensue is clearly at the forefront of this evolution. The nearest Korean Hot Pot outside of this one is in Malaga city centre.

In all, our evening at Ensue Marbella was not just a meal, but an experience. From the carefully crafted Ying Yang hot pot to the quality of the ingredients and the welcoming atmosphere, it is a concept that delivers on every level.
